If you don't want to cook a whole bird -- or if your guests love white meat -- try this sage-infused breast and quick gravy.
SERVES: 4
PREP TIME: 15 Minutes
COOK TIME: 105 Minutes
Ingredients

1 5-pound whole turkey breast, bone in, skin on
22 sage leaves
3 tablespoons unsalted butter, cut into small pieces
2 tablespoons olive oil
Kosher salt
1 14-ounce can chicken broth
1 teaspoon Dijon mustard
2 tablespoons all-purpose flour

Directions
Step 1  Step 1:
Heat oven to 450º F.
 
Step 2  Step 2:
Place the turkey in a roasting pan. Using your fingers, separate the skin loosely from the meat. Distribute 15 sage leaves and the butter under the skin.
 
Step 3  Step 3:
Rub the top of the skin with the oil and sprinkle with
1 1/2 teaspoons salt. Roast until the skin is golden brown and an instant-read thermometer registers 165º F. Transfer to a cutting board and let rest at least 10 minutes before slicing.
 
Step 4  Step 4:
Spoon 2 tablespoons of fat from the roasting pan into a small saucepan and add the chicken broth, mustard, and remaining sage leaves. Simmer for 5 minutes.
 
Step 5  Step 5:
In a small cup, whisk the flour and 1/4 cup water until smooth.
 
Step 6  Step 6:
Add the flour mixture to the saucepan and simmer, stirring constantly, until thickened, about 1 minute. Serve with the sliced turkey.
