Donna's Easy and Delish Black Bean Salsa


Black beans, corn, tomatoes, avacados and more make this salsa sassy and fabulous!

SERVES: 7
PREP TIME: 20 Minutes
COOK TIME: No Cook Time

Ingredients

2 cans black beans
1 can shoepeg (or white) corn
2 med (or large) ripe tomatoes, diced
1 large ripe avacado (more black in color than green), peeled and diced
1 med red onion, diced
1 clove garlic (or jarred garlic is fine: One Tbsp)
1/4 cup fresh cilantro, chopped

Dressing:
3-4tbsp lime juice
2 tbsp good olive oil
1 Tbsp red wine vinegar
salt
pepper (in pepper mill, preferably)

Directions

	Step 1: Mix all but the dressing ingredients in a medium bowl. In a separate bowl mix the dressing ingredients.

	Step 2: After dressing is mixed together, add it to the salad ingredients and toss together into large bowl.

	Step 3: Serve with blue corn chips. Makes about 7 1-cup servings.
