loaded chicken & cheese nachos - ingredients: 32 corn tortilla chips, 1 cup shredded cooked chicken, 2/3 cup salsa fc, 1/2 cup canned black beans, rinsed, drained fc, 1/2 cup canned whole kernel fire roasted corn fc, 1 cup thick cut mexican style shredded four cheese blend fc, 1 avocado, seeded, peeled, diced, 1 tbsp lime juice, 1/3 cup sliced green onion, 1/3 cup sliced black olives fc, 1/4 cup chopped cilantro. Cooking directions: preheat oven to 350° f. Arrange tortilla chips in a layer on pizza pan lined with non-stick foil. Combine chicken and salsa, spread over chips. Sprinkle beans and corn over chicken. Top with cheese and bake 20 minutes or until cheese is melted. Toss avocado with lime juice. Spread avocado, green onion, olives and cilantro evenly over nachos.
